I am very interested in making a huge change in lifestyle/livelihood.  I have the opportunity to run my own farm in Ireland, one that was once a dairy farm.  My intent is to produce Feta.  I have no experience in this area, however, I shall be working alongside experienced farmers (cattle and sheep).  How can I best go about developing my understanding of all that is required to successfully farm sheep/goats and produce Feta?  Are there any work experience opportunities/projects out there?  Are there any courses available to the general public that would assist in this venture?  Travel and expense are not issues.
